The Salad Project is a chain of salad bars across London. Florian de Chezelles met his friend and co-founder James Dare whilst studying hospitality management at university. The pair founded The Salad Project with a mission to bring healthy and quick food to customers living and working in the City. The duo now have 12 restaurants across London. The company raised £9m in equity investment this year from investors including Deliveroo founder Will Shu, to support expansion into Europe, with their first store in Paris set to open later this year. Strong demand is reflected in sales which increased from £5m in 2023 to £18.5m in 2025.
