Flake Bake is a family-run bakery founded in 2012 by Paul Williams – who learned his craft in his uncle’s UK bakery – and his son Mike Williams. The pair founded the company to create handmade Jamaican patties – authentic Caribbean snacks. Operating from Peckham, Flake Bake produces meat and vegetable-filled patties, distributing to local takeaways, caterers, festivals and retail outlets. Their breakthrough came in 2024 when they won Channel 4’s Aldi’s Next Big Thing in the bakery category and secured a nationwide deal, supplying over 2m beef and chicken patties in more than 1,000 Aldi stores. The company has now sold over 9m patties across their homemade and retail ranges.
